Catching Up With the Best : Smoke n’ Willies BBQ

Each month, we will find out the who, what, when, where, how and why’s of businesses you, the reader, voted as the Best of Lewis County in the 2019 Reader’s Choice Awards. For this edition of “Catching Up With the Best,” Smoke n’ Willies gives us the 411 of their food truck!

Who: Will and Brittney Pinkerton are the owners of Smoke n’ Willies BBQ Truck that “serve hungry folks that love good cooking!”

What: “Smoke n’ Willies is a food truck which is a mobile kitchen unit that is HealthDepartment  inspected just like any other restaurant, just on wheels so we can come to you to satisfy your craving! We often get asked what our favorite meal is. Mine is our Meatyloaf with the smoked mac + cheese along with our green beans. Brittney’s is the Brisket with the same sides. We love what we do, and it shows in our cooking. It’s all good!”

When: “We started this business in June 2017 and went full time with it February 28, 2018. Hohenwald definitely shows us the love when we’re in  town on Tuesdays 11 a.m. to 6 p.m. Our supper specials are fresh off the smoker at 4 o’clock for a true pit-to-plate experience.”

Where: “We currently set up in the corner of Fast Pace parking lot in the little, white concession trailer. Just head to Walmart; you’ll smell us! People ask us where our favorite place to set up is, but we truly can’t choose just one. We love working and interacting with different people daily, and each location brings it’s own unique experiences.”

How: “We get asked a lot if it’s easier to run a food truck than a brick and mortar store. Easier is certainly not an honest description of the business of food trucks! haha. There are lots of trips to the grocery store, fuel stops, mobile maintenance and more. We don’t just wake up, hop in the truck, pull into a space and start slingin’ barbecue. Our motto is: We will always provide good food and service with a smile. At a profit if possible. At a loss if a must. But, we will always provide good food and service with a smile.”

Why: “My wife and I have always loved to cook and entertain for friends and family. Becoming a Pitmaster has always been a passion of mine. I woke up one Sunday morning from a dream and had an unstoppable desire to make Smoke n’ Willies a success. Here we are today, and we don’t plan on stopping where we are at. Owning and operating a food truck has made this dream a reality for us. We do have plans for growth and are thankful for the knowledge that we are gaining each day to build our future with Smoke n’ Willies.”
