Your body needs proper nourishment to function. If you ignore this law for very long, you will get sick. This is the 6th of 10 very important principles for how to eat in a way that gives your body the energy it needs. PRINCIPLE 6 OF GOOD NUTRITION: Carefully prepare your seed foods Seed foods include grains, legumes, nuts and seeds. Plants contain toxins and anti-nutrients to help defend themselves, and these are highest in their seeds. Seeds are hard to digest, can irritate the GI tract, and interfere with the absorption of nutrients from...
In honor of Breast Cancer Awareness Month in October, Lewis Health Center will offer walk-in mammography screenings Oct. 5 and 19 from 1 to 4 p.m. to provide convenient access for women seeking their annual mammogram. According to the Centers for Disease Control and Prevention, approximately one in eight women will develop breast cancer in their lifetime. The best defense is early detection, which is why health experts recommend women ages 40 and older receive a mammogram annually. To accommodate those with busy schedules, Lewis Health Center...
Exercising and walking in the heat is far more dangerous than in most cold weather conditions. When the temperature is above 80 degrees and the humidity is higher than 60 percent, the risk of heat stress is greater. If the temperature is 90 degrees or above and humidity is 40 percent, it is best not to walk and exercise outdoors. This is especially true for cardiac patients or other high-risk individuals. Early morning, when the temperature is usually at its lowest level, may be the bet time for outdoor activities. The precautions and rules are...
“The ingredients for this recipe are so simple and the results so spectacular, I’m always willing to share the secret. It’s actually a variation of a doughnut recipe I made years ago, using refrigerated biscuits. The best part of having this bread is tearing it apart and eating it warm.” - Evelyn Kenney; Hamilton, New Jersey Prep/total time: 30 minutes. Makes 10 servings. Ingredients 1 garlic clove, minced 1/4 cup of butter, melted 2 tubes (10.2 ounces each) refrigerated biscuits 1 cup shredded cheddar cheese 1/4 teaspoon dried basil 1/4 teaspo...
No one on this planet can live without this precious liquid for more than a few days. After all, we’re made mostly of water. Sixty percent of most adult bodies are water. Infants are true “water babies,” weighing in at eighty percent water. By retirement age, the ratio drops to around fifty percent. There is water in every cell of the body and in every type of body tissue. Water in the body helps digest the sandwich you had for lunch and loads the blood with the dissolved nutrients, which it carries to each living cells. In the process, water h...
Every day, we lose an amount of water equal to about four percent of our total body weight. If we do not take in enough perspiring, urinating and defecating, warning signals will go off loud and clear. Early on, when we have lost just a little water, equal to about one percent of our body weight, we feel thirsty. If we ignore the thirst, it gets more intense. When water loss raises to about two percent of our weight, our appetite fades. Our circulation slows as water seeps out of blood cells and blood plasma. And we experience a sense of...
As we get older, our memory starts to change in many different ways. These include the ability to remember names, the combination of a lock that we haven’t used in a while and why we just walked into a room. Faces may feel familiar, but we can’t recall how we know the person, let alone their name. When we meet people, we usually move past introductions into more interesting conversation, so we often don’t even pay attention to the name or even notice if the person actually said their name. Sometimes it is simply easier to ask people to repea...
Many of us, who have been working to iprove our health and fitness, know better than to compare ourselves to others or engage in self-criticism while we’re exercising or anytime. This feeling could still happen and it can crush our self-esteem and really become a “physical downer.” So what can we do when this “inner critic” shows up, while we’re taking a nice walk in public or in our Senior Fitness Class? If we listen and believe this “inner critic” it can sabotage our efforts. Keep your mind on your movements and focus on your intentions! If...
One of the best things to happen for Senior Health and Fitness Exercise Classes in the past 20 years was setting them to music. It has provided an exercise opportunity for many seniors who no longer want to jog or run. In addition, exercising to music provides one less excuse to those of us who would choose to skip fitness classes because it is too hot or raining. Music provides a sense of pace and the motivation to keep at it, in contrast to other, more isolated activities such as stationary bike or even walking on the treadmill. The pace can...
Just as the title suggests, this involves simplifying one’s life by choice rather than out of need. It means you put a ceiling on your wants and desires, not necessarily because you have to, but because you choose to do so. You will see the wisdom and potential for peace in your life. Placing a ceiling on what you want frees you up, so that you can enjoy what you already have. Simplifying your life will reward you with more time, money and energy so that you can have more of each for yourself, friends and family. Many people have found that ...
This simple method for tempering chocolate will give you smooth, shiny hot cocoa bombs. Use a good-quality bittersweet chocolate with at least 70% cacao for best results. You can make the bombs ahead of time, but wait until right before serving to cover them in the webbing. This recipe serves six and in total takes about fifty-five minutes including setting time. Ingredients • 12 ounces high-quality bittersweet chocolate, finely chopped • Two 1.38-ounce packages hot cocoa mix (without mar...
Summer spells all things delicious. The vegetables are coming in from the garden, and the fruit is ripe for the picking. I enjoy the flavors this time of year, and there is no limit to what one can create given the bounty of the season. This cake is a tropical, tender-crumbed loaf, with amazing flavor. If you like cakes less sweet, cut the sugar to 3/4 cup. You can also add a few small pieces of chopped, dried pineapple to increase the tropical flavor. This will be my last recipe submission,...
I'm currently reading Vertamae Smart-Grosvenor's book, "Vibration Cooking: Or, The Travel Notes of a Geechee Girl". This book takes the reader on a trip to the low country region of South Carolina/Georgia, where the Gullah People, for whom Vertamae descends, speak "Geechee", a heavily accented dialect of English with Gullah influences. A few notes: I prefer making this recipe with Vidalia onions to give it a wonderfully sweet flavor. You can add herbs, your favorite cheese, or a handful of...
This salad is beautiful on the table, and chock-full of my favorite fruits and vegetables. But unlike traditional broccoli salad, the dressing (usually made with granulated sugar), gets sweetened with honey. The only ingredient not mentioned in this recipe is crispy, crumbled bacon, which I like to add as the final topping when served. If you don't have cashews on hand, you can use almonds or whatever nuts you like best. I sometimes use raisins as opposed to dried cranberries in my salad, so per...
Happy belated Easter, friends. I hope everyone had a terrific Sunday with your families. This week, we take a look at an indulgent comfort food prepared in a mug. If you're cooking for one, or simply craving a serving of pasta, this dish is easy, quick, and satisfying. This recipe turns out great with cooked, gluten-free pasta as well. And as mentioned in previous issues, if you can't find ricotta cheese, you can always substitute equal parts sour cream and cottage cheese, lightly stirred...
If you would like to show off your cooking prowess on Easter with a super-easy, yet outstanding recipe, Grandma's Brisket will take the prize. This brisket is tender, juicy, and flavorful, and is complimented with warm rolls and a salad, or vegetable side dish. This recipe also bakes well in an oven bag for easy clean-up. Keep sealed for two hours, then open the bag for the last hour until done. If you don't want the added corn syrup from the ketchup, substitute with organic ketchup and it still...
It's Spring, the season that welcomes back salads each year. I usually don't post recipes with kale as an ingredient, as folks stop reading when they see the word "kale". But getting this super-food down is so much easier with this recipe. This salad is sweet, salty, tangy, and crunchy; you won't even notice the kale. Because kale and cabbage don't get soggy, this is a great make-ahead meal. Once tossed, place your salad in a mason jar with a tight lid, and take to work for a great lunch. Pair t...
Lyonnaise Potatoes (sliced potatoes cooked with onions) are as beautiful as the name. Sticky, caramelized onions fried alongside golden crispy potatoes, and topped with buttery garlic and parsley. I grew up eating this dish in the South, and it was often served at both breakfast and dinner meals. We didn't know the fancy French term at the time, but fried potatoes and onions are an easy, inexpensive, and amazingly good dish to go with cornbread and garden vegetables, meats, or served alone with...
You know those recipes you read, and think: "This can't be good - it's too easy." This is one of those deceiving recipes, but it is absolutely terrific. If you have ten minutes to prep, your slow cooker will do the rest of the work in four hours. This soup is hearty, and pairs well with a plate of your best cornbread. Several years ago, I picked up a tip regarding minced onions. Of course, nothing beats the flavor of a fresh onion, but when you need to speed things up, my friend told me to...
The Tennessee Department of Health rates restaurants and the Tennessee Department of Agriculture rates convenience stores on a scale of 0-100 based on the business’ practice of proper food preparation, food storage, cleanliness of facilities and more. Businesses are typically evaluated twice a year. Non-priority violations cost the business 1-2 points, while priority violations cost 4-5 points. Priority violations must be corrected immediately or within 10 days of the initial inspection. 2021 Southern Skillet (1/24/21) . . . . 99 LCMS (1/24/21)...
In the South, deviled eggs are the side dish everyone loves to see on the dinner table. But if you're the cook, you know deviled eggs are time-consuming and a little messy to prepare. This dish takes all the fuss out of deviled eggs so you and your guests can get straight to the fun of eating them. It's also adaptable to your own deviled egg recipe, so experiment the first time around. I have included my changes as well. Enjoy! Ingredients: 5 whole Large Eggs ½ cups Mayonnaise 1 teaspoon...
You don't see lemon paired with coconut often, nor do you see a simple, elegant cake assembled so easily with crushed shortbread cookies and ice cream. And here's the best part: the shortbread can be substituted with your favorite sugar cookie, ginger cookie, or lemon cookie. If you do substitute, choose a cookie at least 2 inches in size, so it will line and fill the border of your springform pan. A note about springform pans: these are amazing pans to have in your cooking arsenal, and...
As a child, friends and I loved Velveeta Dip. Back then, it was a can of Rotel, and one block of Velveeta cheese melted in a pan on the stove, and we were set for Saturday night movie snacks. Because we could make dip and chocolate oatmeal cookies, we considered ourselves to be excellent cooks. (laughs) This dip version is the grown-up version of my humble cheese dip from childhood, and it makes a terrific Super Bowl dip as well. You can also substitute Nacho Cheese Dip instead of Velveeta, or...
This recipe takes cast iron to the center of the table with a delicious, satisfying meal, all in one skillet. Cooks may also substitute vegan sausage for the chorizo, and the taste is still terrific. This recipe pairs well with a plate of warm corn tortillas, fresh avocado, and your favorite homemade salsa. Enjoy! Ingredients: 1 poblano pepper 1/2 pound fresh chorizo or bulk spicy pork sausage 4 cups frozen O'Brien potatoes, thawed 1/2 cup shredded pepper jack cheese 1 teaspoon smoked paprika 1/...
