  • Lewis County Recipes: Mini Pineapple Upside-Down Cake

    Melissa Wickline, Contributing Writer|Aug 6, 2020

I remember my college days, fumbling around in the kitchen without a clue how to cook. My boyfriend's mom at the time took me under her wing. Mrs. Sylvia was an amazing lady, and an incredible cook. She taught me how to make so many wonderful, southern recipes: chicken and dumplings, cherry pie, casseroles, and a Pineapple Upside Down Cake. This recipe is always a crowd favorite. It seems that when you shrink things down to minis, people like them even more. Plus, everyone is sure to get a...

  • Lewis County Recipes: Fried Onion Patties

    Melissa Wickline, Contributing Writer|Jul 2, 2020

I grew up next door to one of the South's finest cooks. Aunt Velma watched over me and fed me meals while my parents were at work. That turned out great, because that lady was an amazing cook. Breakfasts always consisted of homemade biscuits, gravy and homemade jam, crispy bacon, sausage, fried eggs, grits, and a big glass of ice cold milk. I ate dinner with her, too. Aside from all the homemade desserts like chocolate fudge cake and biscuit pudding, Aunt Velma prepared vegetables from our...

  • Lewis County Recipes: Juicy Watermelon Salad

    Melissa Wickline, Contributing Writer|Jun 25, 2020

Nothing says summer like a fresh, juicy watermelon. Growing up in north Mississippi, it seemed everyone had a patch of watermelon and cantaloupe in their gardens, and we ate from those gardens daily. My, how times have changed. As a child, I loved to enjoy a fresh watermelon under the old oak tree after all the picking and shelling chores were done for the day. This recipe combines so many different flavors and textures, it's like a fireworks show in your mouth. I prefer toasted or candied...

  • Lewis County Recipes: Browned Butter Red Potatoes

    Melissa Wickline, Contributing Writer|Jun 18, 2020

If you're looking for a super-easy potato recipe you can make at home, or while camping, these potatoes are delicious. I have begun using red potatoes a lot more due to their delicious flavor. I also like how creamy-soft they become once cooked. Of course, I like a recipe I can tweak. These potatoes can be kicked up a notch with the addition of hot sauce, or you can add your favorite herbs and spices. A few other alternatives: *toss in gently-fried and crispy sweet onions at the end, or *once...

  • Lewis County Recipes: Chocolate Black Bean Brownie Bites

    Melissa Wickline, Contributing Writer|Jun 11, 2020

When I was young, my Grandmother made a recipe called pinto bean cake. All I remember is that I couldn't taste the pinto beans, but the cake was delicious. As I strive to provide more delicious recipes with a healthier ingredient list for readers, I wonder what my baker-grandmother would think of a world that attempts to avoid wheat flour in food and baked goods. Either way, she would have approved of these brownies made with almond flour instead of wheat flour, and I think you'll find them...

  • Lewis County Recipes

    Melissa Wickline, Contributing Writer|May 7, 2020

We're all spending more time in the kitchen these days, so I thought this recipe would be a fun introduction to making delicious soup and a crusty loaf of bread from scratch. This recipe tastes like sausage pizza, so add your favorite pizza toppings if you like. If you prefer pepperoni pizza, make sure you microwave the pepperonis on a paper towel for about 20 seconds to get out most of the grease. (Pepperonis are also delicious as snack chips microwaved until crisp on a paper towel). This soup...

  • Earth Talk

    Apr 30, 2020

Dear EarthTalk: Now that Earth Day is 50 years old, I’m wondering how it originally started and whether the Coronavirus put a damper on the celebration this year? – Mary W. Seattle, WA Indeed, on April 22, Earth Day celebrated its 50th anniversary. Back in 1970, some 20 million Americans took to the streets, parks and auditoriums to demonstrate against pollution and other environmental ills stemming from 150 years of industrial development. The idea for that first Earth Day sprung from Wisconsin Senator Gaylord Nelson, who was troubled by the...

I don't know a single Southerner who hasn't grown up eating banana pudding. As iconic as pecan pies, biscuits and gravy, and barbecue will always be to the South, banana pudding will always have its place at the table. This take on the classic is beautiful and quite different. With Mother's Day just around the corner, you still have time to experiment with dessert before Mom's big day. One tip I've learned about making frozen desserts: make frozen cake in a springform pan and be sure to line it...

  • Local heroes sewing facemasks to protect against Coronavirus

    Katelin Carroll, Staff Reporter|Apr 16, 2020

The number of medical supplies such as face masks began to dwindle as COVID-19 continued to spread. Once again, members of the community took it upon themselves to help out in any way they knew how. Alicia Sims Hobbs and Katrina Ivey-Chapman, just to name a couple, have begun making masks for themselves and others once they saw a need. "I had left over fabric and just wanted to help," said Hobbs. Orders have mostly been for individuals, but some have been group orders for businesses who were...
