Well it is a cool, damp and rainy morning here in our little valley. It is not cold enough for us to have a fire going in the old wood heating stove but I have heard by the end of the week we may see a few flurries, of course that sounds good to me because I love to see it snow, just as long as it is just a little snow.
The cats were really hungry this morning, they ate quick and have already went back to their warm beds.
Bob has got the kitchen spotless clean and he left the coffee pot on for me to have another cup of coffee, it sure is good on mornings like these.
I hope all of you are getting ready for Christmas and are looking forward to it. We will start our baking in a few days. I remember back years ago my MaMaw always made a big coconut cake for Christmas, she would make it a few days before, she made it from scratch, no cake mix and no can coconut, it was fresh, she grated her own coconut and used plain flour and their own country eggs. I wish I had her recipe but it was not written down, it was her own recipe. It was about 5 or 6 layers and cooked in her old wood cooking stove’s oven. Does anyone do that kind of real baking these days?
We have had a few busy days, we have had company and I have cooked a lot of potatoes, beans and cornbread, some of our detective friends from the Nashville police department and some members of our local sheriff department came down, it is now becoming a tradition that I cook them supper every year for Christmas and beans and taters are the things they always want me to cook each year. They seem to enjoy my old country cooking.
We have started doing a little Christmas shopping and I have made a few gifts, Christmas will be here before we know it. I know it maybe a sad time for some folks and there is a lot of sickness going around. Let us all try to help those we can help and pray for the others that we can not.
Our great grandbaby is home and doing good. Thank all of you for your prayers. He made it home for Christmas and that is one of the best gifts we could get for Christmas.
Thank all of you again for all the cards, calls and encouraging words to me about my ramblings each week. I sure am thankful that you all get something from them. That is just the way we live here in our little valley. We all have something to be thankful for and we are all blessed.
I have got to get busy because I have a lot to do today. I am not going to worry about tomorrow and I am going to take one day at a time because God still has it all under control and he is the light at the end of the tunnel.
